In 2014 as a junior in college, I was roped into a two-month summer trip to Istanbul, Turkey. Growing up loving travel but struggling with history, I had no clue what I was getting into—I couldn’t even show you Turkey on a map. So it came as a complete surprise that 60 days in this city would make me more familiar with it than my own hometown and grow a love I didn’t know was possible. I could never up all I learned and love about Istanbul, but for cities like this that I know well it’s pretty easy to identify the places I would revisit today if I could, and that’s why I’m starting my #khowdozen Lists. Consider this a starting place for how to engage with Istanbul as a first-time visitor; perhaps you could even squeeze these twelve experiences into a long layover! This isn’t a list of the top sites or best fine dining; it’s the honest opinion of a girl who spent two months in the simple Kadikoy neighborhood and grew to love the Turkish people and the ways they connect, eat, and explore their beloved city. New York City is chock-full of restaurants with various cuisines from around the world. With so many places to eat, you may find yourself struggling to make a decision about where to grab a bite. New York restaurants know that vegan isn’t one size fits all, which is why their restaurants are based on your food palate and preferred dining experience, as opposed to just excluding meat from their menus.

I KNOW this is a hot take, and I swear I love Germany with all my heart, but Belgium has the best beer hands down. Not to mention the frites (fries), the chocolate, and the waffles. I have been to many a European city and my tastebuds were happiest in Belgium by far. As an ode to the country (and hopefully as a way to convince you to add Belgium to your next trip), I've created this guide of some of my favorite bars & restaurants I tried throughout the country! For my plant-based besties out there: Many of these places offer vegan options. Some of them are 100% vegetarian or vegan, or have a separate menu catering to those diets. I always struggle when traveling to places with very meat-heavy traditional cuisine because I want to participate in the culture while honoring my diet. Belgium was one of the BEST countries when it came to catering to my needs. Not only did they offer plant-based food, I was able to find plant-based versions of the traditional food (this is really hard sometimes!). You can enjoy the local flavor guilt-free! Ireland is my favorite country in Europe, I can't lie. Having had the opportunity to travel a lot around the "Emerald Isle," I can assure you that the rainy days are not too bad (LoL). In reality, it doesn't rain that much. Dublin, (Átha Cliath in Irish language), Ireland's capital, is a lively and bustling city filled with people from all over the world. You'll encounter and hear different nationalities around, creating a vibrant atmosphere. Dublin boasts a rich and captivating history that spans over a thousand years. The 18th century marked a golden era for the city as it thrived culturally and economically. The Georgian architecture and literary heritage flourished during this time, with renowned figures like Jonathan Swift and Oscar Wilde leaving a lasting mark. Playing a significant role in the struggle for Irish independence during the 20th century, Dublin witnessed pivotal events such as the 1916 Easter Rising that shaped the nation's destiny. I moved to Darien, Connecticut, when I was around six years old, and aside from a couple of years when we lived in Hong Kong - it's where I called home for the majority of my life! After five years in Chicago, my fiancé and I moved to Stamford in 2023, and honestly, really struggled to find our footing at first. We were spoiled rotten when it came to our selection of high-quality, (relatively) low-cost restaurants in Chicago.
