The Pays de Sault sits on a high plateau, creating a cooler climate for the lavender to bloom later in season. However, Pays de Sault's landscape isn't just endless rows of lavender. It is a beautiful mix of bright yellow sunflowers, green olive trees, old bories and vineyards over rolling hills and stunning French villages.
