Day out in the lavender fields of Pays de Sault, Provence

The Pays de Sault sits on a high plateau, creating a cooler climate for the lavender to bloom later in season. However, Pays de Sault's landscape isn't just endless rows of lavender. It is a beautiful mix of bright yellow sunflowers, green olive trees, old bories and vineyards over rolling hills and stunning French villages. There are many lavender fields, distilleries and scenic views around Pays de Sault. This guide has my recommendations for a family day out among purple fields and pretty pit stops.

Avignon is an excellent base if you want to drive around Provence, as most of the lavender farms are about 2 hours drive. Here is my guide to find out more about this historic city:

Lavender flowers in Pays de Sault usually bloom by July and will be harvested by early August. The fields here produce a more prized variety known as lavandin, with flowers having a higher essential oil content, resulting in intensely fragrant fields. Pays de Sault is also not as busy compared to Luberon Valley or Valensole Plateau, but they are no less beautiful.

I have included a number of sites below, but it will not be possible to visit them all and enjoy each experience in just one day. For a day visit I would recommend planning a route with one or two villages for pit stops. If you would like an informative tour or want to buy lavender products, include a distillery tour in your itinerary. If you are visiting for the pics then pick a route and keep an eye out for the fields and farms on either side of the roads.
