Traditional dishes often feature fresh seafood, locally grown vegetables, and olive oil. Some local specialties include "pastitsada" (a spicy meat stew with pasta), "sofrito" (veal in white wine and garlic sauce), and "bourdeto" (a spicy fish stew). The island's vineyards produce notable wines, and local olive oil is highly prized. Dining in Corfu offers a delightful exploration of flavours and culinary traditions, making it a paradise for food enthusiasts. Accommodation is an important decision to make prior to planning your route but our firm suggestion is to stay somewhere in the northern part of the island. We chose to stay in Pyramid City Appartments - a budget friendly accommodation is the North-East side with great views to the Albanian coast but very poor connections. The roads can get very narrow in this side of the isle therefore if you're not comfortable driving in other countries and with rental cars you're better off staying near Paleokastritsa with very good connections but less relax.

What traps for the unwary have I learned? - Visa, scrambling to find WiFi that works at the airport because I didn’t pay a fee to enter Argentina - Visa, having a typo on my birthdate and almost being denied enter - 6 month experiation period for passports - literally had an airline agent in a lounge tear up my boarding pass in front of me

Some time ago I happened to read a book about the parks of Salento, the land where I was born and raised and I discovered something that I have always known and that I would like all visitors who come here to know. There is a Salento known throughout the world, that of the fabulous beaches and the blue sea, frequented by tourists especially in the summer. And there is a hidden Salento, to be visited all year round: enchanting paths among numerous protected areas, nature and history, archaeological sites, art masterpieces, artisan workshops and ancient villages, food and wine tastings, rural worlds; places to discover on foot, by bicycle or on horseback, following ancient sheep tracks or sailing along the coast. A great variety of landscapes, both marine and terrestrial, with multicolored seabeds, spectacular caves, golden sand dunes, wetlands that become true paradises for birds. And again; junipers, Mediterranean scrub, garrigue and wild orchids, Aleppo pines, holm oaks, Vallonea oaks and centuries-old olive trees in a countryside dotted with dry stone walls, pajare and fortified farmhouses.
