"All the travel guides will recommend Mercado San Miguel, which is stunning, but quite expensive. I went recently with visitors and the cheapest thing I saw was a plate of veggies for 12 euros. You can eat much better for a more reasonable cost at other local markets like San Fernando, Mercado de Anton Martín, Mercado de San Ildefonso in Malasaña and the Mercado de San Anton in Chueca.
