"Another one of my favourites here in Rome.
A modern trattoria serving up classics from Roman cuisine and other Italian regions.
An immense wine list, probably the largest I've laid my eyes on, with some incredible bottles and a great variety of choice.
Famously known for their carbonara, it is arguably the best in Rome (for me hands down).
Another staple here is their ox tail deep-fried meatball, taken from the Roman classic 'coda alla vaccinara'.
They also do an incredible maritozzo, made with burnt flour and green peppercorns.
An immaculate vibe and the staff are extremely friendly and helpful.
They have an online booking system on their site & instagram. Make sure to book in advance! "

"Cuisine: Modern Roman.
A modern trattoria with a vintage vibe, Santo Palato is known for its focus on traditional Roman dishes with a contemporary twist, using seasonal and local ingredients.
Must-Try Dish: Rigatoni alla pajata (a traditional Roman pasta with calf intestines), for those adventurous enough to try it.
Tip: It’s a great place to explore Rome’s culinary traditions with a modern edge, but it’s popular, so book ahead."

"If there is ONE place you got for dinner in Rome - THIS IS IT. Every element was exquisite. A little out of the centre where I stayed, but easily caught a taxi. I cannot recommend this more. It is exactly what a Roman trattoria should be: unassuming on the outside, bright and welcoming once you're in. "
