Iceland is one country that is on just about everyone’s bucket list that we know. While the dream is to rent a cute little camper van and travel around Iceland’s Ring Road for two weeks, between things like budget and time off we know that’s not always possible. For many [American’s especially] PTO is certainly lacking, so we wanted to make a shorter itinerary that still lets you see plenty of the amazing sites that Iceland has to offer.

If you are a beer lover you will fall in love with Portland! There are SO MANY great breweries in the area, you can easily dedicate a day or two just to beer. Portland is also a foodie's paradise with so many great, local options there's something for everyone. So many of these have great options for those that are gluten-free/vegan/vegetarian!

This city is full of history, culture and of course thermal baths. But the one thing you must do at least one time during your visit is head to a Ruin Bar, easily the most unique experience to have in Budapest. While they have been growing in popularity and becoming a little more main stream, they are still a must visit.

When traveling to a new city many people look for a more unique or less 'touristy' experience. During our time in Krakow we were able to book a fantastic cooking class that really let us see the city like a local!
