"Best cinnamon rolls in Iceland! Do not miss out on these!
Icelandic Cinnamon Roll Recipe
Ingredients:
2 1/4 tsp yeast
2 tbsp warm water
1 small to medium egg
5 3/4 cups 00' pizza flour
1.67 tsp salt
9 tbsp sugar
8 tbsp water
Cinnamon filling:
7 ounces marzipan almond dough
1 1/4 cup sugar
2 sticks butter plus 1 1/2 tbsp butter
9 1/2 tbsp cinnamon
Mix yeast with water and let stand for 10 minutes. Test yeast by adding 1 tsp of sugar.
Add '00 flour, egg, salt, and sugar to yeast and mix with bread/dough beaters. Mix for four minutes on slow and then eight to ten minutes on fast. Shape dough into a ball and place in a bowl. Cover the bowl and put bowl into refrigerator for 24 hours.
Filling: Mix marzipan, sugar, and butter (1 cube at a time). Add cinnamon and mix all together. Texture should be very fine and smooth. Put this in a bowl, cover with Saran wrap, and keep at room temperature over night. Keep some where warm an hour before using.
Roll dough to .07 inches thick. Dough should be 19 1/2 inches wide when rolled. Spread filling all over the dough like putting butter on bread. Roll dough up keeping it nice and tight. Take knife and cut into 12 pieces.
Place buns on oven tray with baking paper tucking ends under bun and gently pushing them down tray. Place saran wrap over buns and allow them to rise at room temperature for two to three hours.
Set oven to 410 degrees fahrenheit. Take bowl and mix two eggs and brush and egg wash each bun. Use sieve to dust each bun with powered sugar (two shakes). Bake for 10-11 minutes.

"🥐 Brauð & Co. is an awesome bakeshop in Reykjavik.
👉 It's the perfect spot to pick up a grab-and-go breakfast or car snacks.
🍞 And if you're self-catering, their breads are amazing for toast and sandwiches.
😋 Spoiler Alert! Everything from their cookies, croissants, and muffins are delicious! But if you want to try something Icelandic, go for:
❤️ Hjónabandssæla - Happy Marriage Cake: This cake is made with homemade rhubarb jam and topped with buttery, crumbly oats. It's one of the best things to eat in Iceland.
🐌 Snúður: These swirled pastries, called “snails,” are popular throughout Scandinavia. The ones at Brauð & Co. are some of the best around!
😋 Available in delicious flavours like cinnamon, caramel & muesli, and cardamom.
😊 Vínarbrauð: A long and flaky pastry with jam or custard in the middle, dusted with sugar and almond slices or a drizzle of icing.
HOURS: 6:30 am - 5 pm"

"My favourite bakery! Grab a coffee and enjoy its deliciously gooey cinnamon rolls, which are a must-try.
The bakery’s exterior is covered in a colorful mural, which has become iconic in Reykjavik and a favorite for photos.
Open early in the morning until evening, often selling out of popular items by midday, so better arrive early for the best selection!
