This is becoming a bit of a thing in beautiful cities, organic markets.

A sunny morning in spring, radicchios coming to an end, the farmers are telling me of Tuscan chicken they're preparing for supper. I wonder if they've been talking about it since 4 o'clock this morning. A tiny street filled with stalls, fishmonger, cheesemonger, pie maker & plenty of organic vegetables. And intriguing shops surrounding. A Persian artisan bread maker transporting us to another mystical world with huge sheets of bread hanging, he gives me a slice to decide. Napoli Pasticeria for Italian Coffee and Tiramasu. 'Wild Country Organics, 'Brambletye Fruit Farm - Organic & Biodynamic' & 'Perry Court Farm'.

Nestled into a very prestigious part of London with the Royal Albert Hall, Natural History Museum, Science Museum & V&A only a few minutes walk away, this is a street filled with epic food from all over the world. All ingredients must be sourced locally from named farms/suppliers for the main ingredients, and at one end you will find a biodynamic grower selling his produce of the season. I spoke to the ‘Galettes’ Creator regarding his organic buckwheat gluten free galettes, his supplier is Shipton Mill.

The beautiful Jo from Grove Farm in a sunny spot underneath a tree, chatting & dispensing her home grown chemical free, not certified vegetables. She works with a collection of growers in Essex who grow ethically and supplies four markets in London each week (Alexander Palace, Oval, Stepney Green). She no longer sells directly from her farm because she 'talks too much and no work gets done. A stunning tiny lovely market in the park with a few stalls selling everything you need, seasonal vegetables, craft beer and homemade spice pastes made with organic ingredients.

A market gem, and the most inspiring street food experienced in a London weekly market. My spirit was not even dimmed slightly with icy winds, rain and frozen feet. Finally selecting a ‘Breakfast PANUOZZO’ after huge contemplation - Mozzarella, Vegetarian Cumberland Sausage, Fiery Chilli. ‘Van Dough’ Wood Fired Sourdough Pizza with organic passata. Elsewhere Natural Wine and Bloody Mary’s, Home Smoked Trout Bagels, Vegan Cashew Feta, Neil’s Yard Cheese, fresh Wild Fish and essential organic fresh produce ‘Wild Country Organics’.

Paradise! A 100% organic market in London! The only fully organic market in the United Kingdom. Biodynamic bouquets, wild fish, fresh produce harvested on the day, organic street food, lovely spots to stop for a while & sip organic coffee, raw milk… Flavoured by the passion of artisans & the pure simple knowledge of stunning ingredients. One of my favourite discoveries is ‘Soleshare’ - run by Delphine & Georgia. They buy directly from tiny sustainable day boats and have a sublime assortment of fish you may never have heard of before. Freshly shucked oysters are available with a perfect mignonette sauce, shallots chopped so pristinely you realise immediately this is special. Something delicious always on the counter with a quirky twist like flatbreads with huss and chalk stream trout kofte burgers, rocket & tzatziki or the smokiest mackerel in pita with puttanesca dressing. I learned something too about oysters, in the sea they spend their lives at around 12C, so it is not necessary to keep them at 3 degrees in the fridge. How would you cook your oysters I asked? We always do ‘Rockefeller’. Parsley, onion, garlic, lemon, breadcrumbs & butter melted on top.

I had a dream, after staying with Mum in a little town called Tokoroa, New Zealand, halfway on a motorway between Auckland and Wellington, where trucks stop, gangs ride through and All Blacks are born. After scouring a local supermarket for organic ingredients and finding it devoid of inspiration and beauty, I found this guy called Alan in a carpark nearby selling organically grown vegetables directly from his farm. They were less expensive than the supermarket, fresh and luscious with life. He was very knowledgable about growing and gave me many tips over the following weeks for planting and controlling insects naturally. The few people I knew in Tokoroa had absolutely no idea about this man and it took me a while to realise he was there. I wondered if it would be possible to create a platform to find the most beautiful artisanal produce, or the freshest organically as a bare minimum, biodynamic, regeneratively grown vegetables wherever you were in the world. Alan gave me his number and said I could meet him on Tuesdays also if I was ever running out of vegetables. The seed of the dream though, started many years before with my love of markets. I had a job one winter in the South of France, Sanuary-sur-Mer. On weekends I would head for Aix en Provence getting up early Saturday morning, wandering down to the market in time to watch everyone set up their stalls, sitting on the edge of this in wonder sipping espresso. Later I worked in a fresh produce shop in London for a few years sourcing directly from artisan growers, regenerative, people preserving ancient farming techniques and began to learn the seasons and truly about stunning ingredients. It is the energy of the market place that captures my attention. The farmers who bring their produce directly, you can actually sense the vitality. It's so joyous and life afirming and glorious!
