"Just outside of Modena is this cooperative making parmigiano. 50 families.
I have been several times and their tour is very informative.
Don't miss shopping at their little shop after the tour.
You can pick up some really wonderful ages parmigiano.
24 months, 48 months and even older.
Also from the various cows, I picked up one from the brown cows this time as well.
The red cow parmigiano is quite sought after as well, but I have had it before.
