"Joia is the first vegetarian restaurant in Europe to receive a Michelin star and is still the only starred vegetarian restaurant in Italy.
Though they are not completely gluten free, they are AIC certified and are very clear in listing allergens on their menu. They pay close attention to sustainability making sure nothing goes to waste, they only use fresh local ingredients, and the menu changes with the seasons.
Of course, being a Michelin starred restaurant, this is a really unique dining experience and something I think every celiac should get to experience at least once!
Reservations are needed at least a few weeks in advance. "
