Although the modern day baguette did not emerge until the 18th century, our medieval friends would have eaten bread that was round. But back to modern day: This particular bakery is important because they were the 2010 and 2015 winners of the prestigious “best baguette in Paris'' award. Bread is taken very seriously here in France, and there are even laws that regulate it. The Bread Decree of 1993 states that traditional bread must be made using only four ingredients - flour, salt, water and yeast. To be eligible to enter the contest, the baguette must also weigh between 250-300 grams, and measure between 50-70cm. It can also only contain 18g of salt for every kilogram of flour used. The winner is awarded the privilege of providing the president of France with the daily baguette for the year. Due to the strict regulations in place protecting the traditional baguette, it is advisable to order a “baguette tradition" rather than just a “baguette” in French bakeries if you want to be sure you are getting the most authentic French bread possible.
