The chef-owner, who regularly comes into the dining room to talk to his guests, offers a tasting menu of about 17 courses. His culinary influences come largely from France and Italy, but you can also expect plenty of theatrical presentation and elaborate constructions. Beneath the show are good quality ingredients, whether it's veal with asparagus, smoked trout with almonds or scallops with a delicious lemon cream.
