1 Michelin Star and Taste Atlas - "There are few people who have not heard of the Don Julio restaurant and Pablo Rivero, the chef-owner at the helm of... one of the best grills on the planet! Walking through the doors of this restaurant, where it is not easy to get a table, means immersing yourself in Argentine culinary culture and understanding their passion for meat, which is seen here as a family legacy (Pablo's grandmother was a butcher and his parents were cattle ranchers). How have they achieved excellence? Thanks to their exclusive mixed maturation process, the selection of animals (Hereford and Angus breeds), their concept of sustainability and Regenerative Livestock Farming... The philosophy is that of a classic grill, although evolved and with gastronomic overtones. They present a cut counter that is a spectacle, a "V" shaped grill so that the fat does not fall on the embers producing smoke, white quebracho charcoal that does not alter the flavours... and a wine cellar, focused on national wines, which treasures authentic gems."

Recommended by Michelin Guide: Situated just a few metres from the stunning Jardín Japonés, a verdant garden that highlights the friendship that exists between Argentina and Japan, you’ll come across Mishiguene (“crazy” in Yiddish), a restaurant that is full every day and that everyone is talking about. In its busy dining room, with its classic English style and a bar counter for customers, discover cuisine that revives the flavours of Jewish cuisine from a contemporary perspective. These revive Jerusalem-trained chef Tomás Kalika’s childhood recollections and his quest for “emotional memories” that demonstrate the imprint of an immigrant population marked by history. On his à la carte, which is complemented by a tasting menu, you’ll find delicious and copious dishes full of personality which usually feature lots of ingredients. One of Mishiguene’s signature dishes is Pastrón, a beef prime rib cured for ten days with salt, herbs and spices, which is then smoked over wood embers for four hours, and steam-cooked for a further fourteen.

Recommended by Michelin Guide - "Chef Germán Martitegui, who is well known thanks to his role as a judge on MasterChef, has given his cuisine a complete makeover, but one which is the complete opposite to the traditional Argentinian taste for meat. This is showcased via his “We do not kill animals” maxim and a 100% vegetarian menu (with vegan options) in this restaurant in the prosperous Recoleta district of the city. This bright and relaxed eatery occupying the former interior garden of a house is always full and comes as a pleasant surprise thanks to its casual atmosphere and discreet street access – the outside gives no inkling of what’s inside! Once you’ve rung the bell, you are escorted to a striking dining room with large picture windows and plenty of vegetation. There are no tables here; instead, you eat at the central kitchen counter, enabling you to see how dishes are grouped by ingredients (humita, corn crisp and cumin meringue; chori, bao and magic; puff pastry and peach). Marti also grows its own wild mushrooms here."

Hi! I’m Ashley. In 2021, my husband Levon and I retired in our late 50s and sold just about everything - our Washington, DC home and all of our worldly possessions (except our dog, Ernie, and Levon’s beloved paramotors) and hit the road. We now spend at least part of each year in beautiful San Miguel de Allende, Mexico and slow travel the rest of the time. Over the last 27+ years together, we’ve lived in 6 countries (the US, Egypt, Zambia, South Africa, Kenya, and Mexico), and traveled to over 40 more. In 2024, we traveled to 13 countries - a personal best!
Our ideal location is 75 degrees, has lots of culture and natural wonders, great food, and a modest cost of living. We do splurge on amazing places and experiences every now and then, and we try to make up for it by going to less expensive places to balance our budget. We want to get the most out of our time and money!
