Livio Colapinto
"Part of Premiate Trattoria Italiane - a small group of 15 restaurants preserving šŸ˜‹ regional food traditions and diversity across Italy - Cibus is a trademark of Apulian cuisine. Since 1994, chef and owner Lillino together with his wife Angela have served family recipes and specialties from Ceglie: a festival of homemade antipasti, memorable fresh šŸ semolina pasta, and impressive cheeses and meats. Set in a whitewashed building dating back to the Middle Ages that was a former monastery, Cibus is devoted to seasonal cuisine inspired by traditional recipes of the region like the suckling pig with Primitivo wine and indigenous onions from Acquaviva. "An institution in Puglia, Cibus has been serving delicious food and has been recognised as one of the best restaurants in the region for many years. I love trying their cured meats and cheeses (which they cure and age in house). Their dishes reflect the local farmer's traditions and recipes"
Chelsea Papa
"Cibus opened in Ceglie Messapica, one of the regionā€™s oldest towns, just as the slow food movement was gaining traction. Traditional dishes prepared with locally sourced ingredients are served in a rustic space with regional produce like dried peppers and onion braids adorning the walls. "
