"Dill was the first restaurant in Iceland to be awarded a Michelin star. The accolades just kept coming for Gunnar Karl Gíslasson's New Nordic restaurant. The chef tries to use Icelandic ingredients and traditional techniques whenever possible. The tasting menu begins with a handful of small plates. They might feature smoked haddock, skyr, wild goose, and onion cakes. The Öland bread (crunchy on the outside, soft on the inside) shouldn't be skipped. It's served with spruce butter. While scallops, cured lamb, monkfish cheeks, and beef ribs are just a few of the main ingredients with which you might be spoiled throughout the rest of the meal. The wine pairings are organic, too.
Note: This isn't a restaurant you can just walk into, so plan in advance. Their schedule is a bit odd--they alternate weeks of being open Tuesdays to Fridays and then Wednesdays to Saturdays. Be sure to join the waitlist if you have your heart set on a sold--out evening."
