Where great Gin & Tonic meets modern food in a sophisticated interior.
The concept of Bistro Spejle is quite cool: no menu but fresh homemade food served on wooden skewers.
This idea came from the traditional Czech open-faced sandwich (called chlebíček).
They serve a great variety of elaborated chlebíčeks, but also dishes like pork tenderloin with sweet potato purée.
You take as many skewers as you want among all types of tapas (cold, warm and deserts) and you bring all you sticks to the cash desk to know how much your bill will be.
1 Skewer costs 33 CZK and the number of skewers for a dish will simply depend on its complexity (it’s usually between 1 and 3).
Another reason to visit Spejle is definitely their large selection of Gin & Tonics, one of the largest in Prague. They even have a table that helps you pair each tonic with the most suitable gin.
My favorite combination was definitely gin with pomegranate tonic. "
