How long should you stay in Aswan?

Well, if you are planning to visit Abu Simbel then you can take a daytrip (early morning) and then come back to lunch and a sunset felucca ride. That's Day 1 right there.

Day 2 you could explore the Philae temple, unfinished obelisk and the museums. You could go take a stroll in Gharb Sohail island (maybe buy some spices and souvenirs). You could hike the Abo El Hawa Mountain at sunset.

You could but you don't have to, spend day 3 exploring whatever you didn't get the time to explore.
