This is Ambergris Caye, the largest island in Belize, northeast of the mainland and surrounded by the beautiful Caribbean sea. Belizean cuisine is a delicious blend of Caribbean, Latin American, Mayan and African influences making it a truly wonderful experience for food lovers. The ingredients are fresh and local, featuring seafood, tropical fruits, rice and beans, and coconut milk curries. Staying on Ambergris Caye, we ate a lot of seafood. Fish, conch and lobster were freshly caught every day, so we indulged! Belize is an incredible country with a treasure trove of natural wonders, rich cultural history and endless outdoor activities. There is something for all ages, all interests and all levels of activity. We recently spent a weekend in Ambergris Caye. This is not enough time to cover all the things I really wanted to do, which included a learning about ancient Mayan civilization and finding out more about the wildlife native to Belize.
