Meet Thomas Hill, a culinary expert who brings Rome's food scene to life.

In this interview, Thomas Hill shares how he created "Eat Sleep Rome Repeat," his passion for Italian cuisine, and offers insights into his experiences as a former Michelin-recognized chef and current food content creator in Rome.

Hey Tom! Could you start off by telling us about your brand, "Eat Sleep Rome Repeat” and the story behind it? What inspired you help people experience the Eternal City to its fullest?

So the name Eat Drink Rome Repeat was inspired from the famous Eat Drink Rave Repeat slogan and song, and I thought it perfectly represented my content and vibe. My main focus is showcasing Rome's best food and drink spots, and I'm constantly making my way through the city eating, drinking, 'romeing', and repeating.
Through my content, I hope to help tourists find the best culinary delights, avoiding tourist traps and experiencing my city like a local to have the best of trips.

What was it like growing up half Italian and half English? Which Italian customs and traditions vs which English customs and traditions did you follow?

Growing up half Italian and half English definitely gave me some benefits, such as learning two languages and becoming bilingual. I definitely feel and see myself as more Italian, in terms of traditions, culture and behaviour, above all with food and drink and also cooking.

You previously worked as a chef for nearly 8 years, including four that were Michelin recognized. What was that like and how did that impact the work you do now?

I've always had a huge passion for food, since I was a kid. I achieved my dream of being a chef and working in top restaurants, but felt it was time to move on and try something new, but that still revolved around culinary arts. I definitely feel like I have an extensive knowledge on food and cooking, and that obviously helps with my content creation.

What is one restaurant you can’t miss in Rome and why?

My favourite restaurant in Rome is Trecca, for me a must visit in Rome. You will experience true Roman food tradition with an additional touch of class and finesse.

What are three tips you would give someone traveling to Rome for the first time?

  1. I would avoid visiting Rome in August, due to the heat and most restaurants and businesses being closed.
  2. Make sure to have comfortable clothes and footwear, as there will be lots of walking around.
  3. Choose wisely the area you will be staying in, as Rome is a huge city. I recommend Monti, Trastevere, Monteverde, Prati.

In your opinion what is the most misunderstood thing about Italian cuisine? Do you have any tips on enjoying a meal to the fullest?

Many people consider Italian food ‘boring’ and carb heavy, as they assume it just entails pasta and pizza. Italian cuisine differs in each region and city, with a whole range of local recipes and dishes, and that’s the beauty of it. I think the best way to enjoy a meal to the fullest is by eating traditional, local food wherever you are visiting, and getting recommendations by local experts.

Are there any upcoming destinations or projects you’re excited to share with your audience?

I'm currently working on bringing more guides and also offering personalised itineraries through the Thatch platform, and I'm also planning on offering what I would define a 'Roman Culinary Experience', visiting various food & drink spots like a real local.
