"I’m a New Zealander, so I know fried fish. And Casa Revuelta does it right. They specialise in battered salt-cod, a classic Madrid dish, and they do it so well that the moist and flaky fish tastes fresh. Be aware – the place is often heaving (best tapas bar skills out!), service is rustic, and people throw their napkins on the floor. I see people sometimes complain online about the service, but you have to put yourself in the local mindset – the role of these bartenders is to be as efficient as possible, not proffer a smile. Order “un bacalao” (for one piece) and either a caña, vermouth or a “vino tinto” or “vino blanco”. Beware – the wine is rustic, simple stuff from Valdepeñas (a wine region to the south that has historically served Madrid) and so you’re drinking it in small tumblers for the experience, not the aromatics. Sometimes there is a queue snaking outside to get it, but don’t worry, it moves quickly. "
