After surviving the battle of Montaperti against the Florentines, Permalico decided to revolutionize his life by dedicating himself to his neighbor, becoming a friar and transforming his stable into an inn where, until the end of his days, he fed the pilgrims who walked the Via Francigena to Rome. The current tavern is still located at the same address, on the ground floor of a typical Sienese building. The menu is quite affordable and includes all of the Tuscan usual suspects, like: 1. pappa al pomodoro - a bread and tomato stew; 2. ribollita - like minestrone soup thickened with bread; 3. Sienese tripe (with sausage); 4. pappardelle al ragù di cinghiale (see cover image) - flat, fresh pasta with wild boar meat sauce. "
