A few things to note
Starting in 2024 US citizens are required to get ETIAS authorization.
You should always know the emergency number for where you are traveling and should save the number for that country’s US Embassy.
I like to travel light and it’s totally possible to pack for this trip in a carry on. I recommend not taking more than a carry on (or if necessary, a checked bag) and 1 personal item per person. You will also find that European carry on requirements are more strict when it comes to weight and dimensions. Traveling through Italy with extra luggage can be troublesome as there are a good bit of stairs, cobblestone roads and a lack of elevators. Most of the Air BnB’s that I picked have washers so you can freshen up your laundry if needed.
