I believe that staying in Corfu Old Town is the best location on the island. The old town has the most going on and has easy access to reach most parts of the island. I recommend using the public transports or renting a car. These are the best ways to be able to see the whole Island.

This hostel is a good cheaper option. However, it is just outside the Old Town.
And this Hotel is another good option if you have a bit more money. This Hotel is in a very good location.
Restaurants we recommend!
These restaurants are all decently priced, have incredible food and some have the most amazing views. A mix of Greek, Italian and Mediterranean Cuisines Restaurants.
Beaches!
Unlock the coastal wonders of Corfu by renting a car from reliable services like Uno Car Rental or Corfu Top Cars. Embark on a scenic journey over one or two days to explore the island's diverse beaches. You have the flexibility to tailor your adventure, selecting from recommended options on the west side, such as Porto Timoni, La Grotta Bar, Liapades, and Rovinia. Alternatively, venture north to experience Kanoni, Canal D'amour, and Cape Drastis, where catching the sunset at Cape Drastis is a must. A day's car rental costs around 40 euros, inclusive of insurance, with a refundable deposit of approximately 100 euros. Choose the beaches that resonate with you and create unforgettable memories at your own pace.
Things to do!
This day trip is a must. Around 50 euros for a all day boat trip to the island of Paxos and Antipaxos. Where you swim in some of the bluest water in the world.
Also, watch the Swallows at sunset on the road of the restaurant Mouragia. This is a must see in the evening. Hundreds of Swallows will come out and fly around the Old Town at Sunset. Potentially you won't see them in December.
