Here's my guide to getting good vegetarian grub in the Algarve. Some of these spots are vegan or vegetarian, but many are for omnivores and there are good/multiple veg choices on the menu.
I'll continue to update this guide on a regular basis as I go deeper and explore the region that's my 2nd home!

Olhos d'Agua

Versatile Restaurante
@amyposey
Upscale bistro with clever vegetarian options and great service. My favorite on this list (and also it's my local restaurant, so I'm biased!).

Palace Indian Tandoori
@amyposey
There are 2 great spots for Indian in Olhos d'Agua (and they have the same menu). One is closer to the beach and has a charming outdoor patio. Great, tasty food and friendly service.

Pozzetti
@amyposey
Is there anything better than some gelato on the beach? I don't think so. Pozzetti has a few outlets, but I like the one closest to the beach. Great, innovative flavors and high quality.

Albufeira

ROADSIDE KITCHEN
@amyposey
If you're looking for a veggie burger, the Roadside Kitchen has you covered. It's a food truck on one of the main restaurant rows in Albufera (so I mean don't go there for the "ambiance" but it's fine).

South Indian kitchen
@amyposey
Do you need a dosa? Well you're in luck. One of the few spots offering southern Indian cuisine in the Algarve.

Sugar Rabbit Kaffé
@amyposey
An adorable, fresh cafe in the more historic part of Albufeira (and a little quieter than the old town or new town). A little pricy, but they have great food and coffee and a charming spot.

Veggie Momi
@amyposey
Hours are a bit sporadic, but vegetarians rave about this spot as a solid place for veg in Albufeira.

Al-Gharb Coffee Roasters
@amyposey
Definitely the best coffee in town (and HUGE MUGS, which I love). A cute spot for brunch, they roast their own beans, and have plenty of veg options to enjoy on their spacious patio.

Loulé

@amyposey
A fantastic spot for coffee and pastries in the Loulé market. It can be crowded on Saturdays, but worth it to stop in and get a cup while perusing the market stalls.
